Peanut Butter Cookies filled with power. Great Family cookie recipe and so easy to make!

We made these the other day and loved every minute making them – and loved every minute MORE eating them!

A great little treat filled with power peanuts!!

Power Packed Peanut Butter Cookies

Ingredients
  • 1 1/2 cups unbleached all-purpose flour
  • 1/3 cup rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup crunchy peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 small handful chocolate pieces (white, milk or dark – we used white) and 1 small handful chopped peanuts (both ingredients are optional)
Instructions
  1. Preheat oven to 175 degrees C (350 degrees F)
  2. Mix flour, oats, baking soda, and salt
  3. Beat peanut butter, brown sugar, butter, honey, egg, and vanilla in large bowl until well blended (using electric mixer)
  4. Stir dry ingredients into the peanut butter mixture in 2 additions. Stir in chopped chocolate and peanuts
  5. Cover and refrigerate until dough is firm and no longer sticky, about an hour
  6. Butter 2 baking sheets or use baking paper
  7. With hands, roll 1 heaping tablespoonful of dough for each cookie
  8. Arrange cookies on prepared baking sheets, leave some space for them to grow
  9. Bake cookies until puffed, beginning to brown on top and still very soft to touch, about 12 minutes
  10. Cool cookies on baking sheets for 5 minutes
  11. Can be stored for up to 5 days in an airtight container
